Some Dinner Inspiration

When I have time, I look to cook. I always feel accomplished making something healthy that fits my macros. I have included the recipes for some of my favourite dishes. The common theme here is that they are all so simple and quick and use similar ingredients. I used to spend hours in the kitchen last year making amazing paleo creations with mad ingredients but I couldn't keep it up! There are some staple ingredients here that I often include e.g. Very Lazy Chillies, Very Lazy Garlic, Extra Virgin Coconut Oil, Franks Hot Sauce. These recipes are also adjustable to fit your own macros. Steak and Sweet Potato Rostis

Steak and Sweet Potato Rostis

Ingredients

  • Steak (Fillet/Sirloin etc)
  • 200g Sweet Potato
  • Salad of choice
  • Spring Onion
  • Egg
  • Very Lazy Garlic
  • Salt & Pepper
  • Coconut Oil

Method

  1. Shred the sweet potato with a grater in to a bowl
  2. Add the egg and spring onion to the bowl
  3. Mix ingredients and place into the medium heated pan in the shape of a rosti, flipping often until cooked thoroughly
  4. Season the steak whatever way you like! I use salt, pepper and the Very Lazy Garlic
  5. Fry the steak in a hot pan with coconut oil to taste
  6. I like mine rare!
  7. Serve with side salad

Chicken Stir Fry with Rice Noodles

Ingredients

  • 1 Chicken Breast
  • Very Lazy Garlic
  • Very Lazy Chillies
  • Ginger
  • Dark Soy Sauce
  • 1/2 pack of 'Ready To Wok' Rice Noodles
  • Stir Fry Veg
  • Coconut Oil

Method

  1. Chop the chicken into strips
  2. Heat a pan to a medium heat and add Very Lazy Garlic, Very Lazy Chillies and chopped ginger
  3. Add chicken to the pan and mix into the flavours
  4. Add chopped veg
  5. Add a few splashes of soy sauce to taste
  6. Add in the rice noodles and stir through for flavour
  7. Serve!

Fried Chicken with Sweet Potato Fries

Ingredients

  • 150g Chicken Breast
  • 150g Sweet Potato
  • Very Lazy Garlic
  • Very Lazy Chillies
  • Greek Yoghurt
  • Franks Hot Sauce
  • Salad Ingredients
  • Coconut Oil

Method

  1. Heat the oven to gas mark 7
  2. Chop sweet potato into long narrow fries
  3. In a bowl, add sweet potato, garlic, chillies and herbs to taste (I like rosemary and oregano)
  4. Melt 10g of coconut oil in the microwave and pour over the sweet potato
  5. Mix well in the bowl and add to a baking tray, ensuring they are not touching
  6. Place in the oven for 20-25 minutes until crispy
  7. Chop the chicken and cover in herbs to taste (I use 'The Gym Chef' seasoning)
  8. Heat a pan to a medium heat. Add coconut oil and add chicken. Cook thoroughly 
  9. Add Franks Hot Sauce to greek yoghurt for a 'taco sauce'

Ingredients

  • 100g lean mince
  • Peppers
  • Onions
  • Very Lazy Garlic
  • Very Lazy Chillies
  • Franks Hot Sauce
  • Coconut oil
  • Sweet Potato
  • Spring Onion
  • Black Pepper

Method

  1. Heat a pan to medium heat with a teaspoon of coconut oil and add a teaspoon of Very Lazy Garlic, Chillies and the 100g of mince
  2. Add in peppers, onions and Franks Hot Sauce
  3. Pierce the sweet potato with a knife
  4. Bake in a microwave for 3-5 minutes until soft
  5. Scoop out the sweet potato into a bowl
  6. Add spring onion, black pepper and mash together
  7. Stuff back into the potato skin and serve

Ingredients

  • Wholewheat wrap
  • Tomato Passata or crushed tomatoes
  • 30g Mozzarella 
  • 20g Red Cheddar
  • Oregano
  • Franks Hot Sauce
  • Toppings of choice

Method

  1. Heat the oven to gas mark 7 and add plain wrap
  2. Remove from oven when the wrap looks a bit more solid (about 8-10 mins)
  3. Cover in tomato sauce
  4. Add whatever toppings you want (I used cooked spicy turkey mince)
  5. Cover in cheese, oregano and a splash of Franks Hot Sauce
  6. Return to oven for approx 5 mins until cheese is melted and the edges are crispy
  7. Enjoy!

Ok since you've read this to the end I will tell you about my granddad's secret dressing :)

Shredded Chicken Salad with Pop's Secret Dressing

Ingredients

  • 150g Chicken Breast
  • Salad Ingredients
  • Extra Virgin Olive Oil
  • White Wine Vinegar
  • Honey
  • Garlic
  • Coconut Oil

Method

  1. Add Chicken Breast to a pot with boiling water and leave on a high heat
  2. After about 15-20 mins remove chicken breast and cut to check there is no pink left
  3. Pull chicken apart using a fork
  4. Optional: cook it for a few minutes more in a pan with coconut oil and herbs/spices for flavour
  5. In a jar add 3 tablespoons of olive oil, 2 tablespoons of white wine vinegar, 1 tablespoon of honey and a chopped clove of garlic. Mix and serve with chicken and salad ingredients
